It’s Sunday Brunch day! Meaning I get to sleep in, shower forever, and plan and chop up Eryn’s meals for the week while baba cares for her.

She’s not a bad eater. But not a great either. We’ve done a mix of baby led feeding and scheduled meal times. She still nurses on demand. Usually the only way to get her to eat her cereal or dinner is to bribe her with Cheerios. She’s only interested in carbs, and doesn’t care for what’s on our plates. Though, this may be due to her teething this month.

The only things she’ll eat enthusiastically is plain yogurt, whole strawberries, rice cakes with cream cheese, Cheerios and pears.

Until this morning.

I made her “fruity rice” and she absolutely loved it!

Fruity Rice

  • 1/2 cup brown rice (parboiled so you cut the cook time in half)
  • 1/2 cup strawberries
  • 1/2 cup banana
  • teaspoon vanilla
  • teaspoon cinnamon
  • 1/2 cup water and 1/2 cup homo milk (or coconut milk)

Bring the rice, water, milk, vanilla and cinnamon to a slow boil and simmer on low for 20 minutes or until cooked. Blend (mash, squash, or leave as is) the fruit and rice to your desired consistency (add more water / milk if you find it’s sticking to the blade, or if it’s too thick. The rice will continue to absorb the liquid in the fridge, so you may have to add more water / milk if you serve it the next day as well).

Makes about 2 cups and is really yummy.
